Remy Urio began working for Duma in February, 2006. Having worked as a chef for more than twenty-five years, he is Duma’s most experienced chef. His title is head chef, or ‘mpishi mkuu’ in Swahili. He cooks for three to four safaris a month during the high tourist season.
Remy began his career as a chef in 1981 and has had a long and interesting career. After completing his chef training, he worked for Bushtracker Safari Camp. He was an assistant cook and his duties were to plan and prepare meals with the chef. His location during his four years at Bushtracker was in Selous Game Reserve in Southern Tanzania. During that period, he lived in the Selous and had only short trips to his native Arusha.
After his time at Bushtracker, Remy worked as a chef for two years for ABB Company, the contracting company that installed electrical lines from Arusha to Singida. He was the head chef and he cooked daily meals for 13 Danish expatriates working on the project.
After completing his contract at ABB, Remy again returned to the bush to cook for hunting safaris. He worked for Game Frontier from 1997-2005, during which time he spent six months each year living and working in Selous Game Reserve. He acted as head chef for Game Frontier’s luxury mobile camps.
Remy loves to cook and does not want to change careers. His English is also excellent and he enjoys conversing with clients in the car and after dinner.
Remy has been a choir member at his local church since 1976. He competes in many choir competitions and practices three times a week when he is not on safari. After he retires, he wants to dedicate more of his time to the church and choir. His church’s choir won a local choir competition in October, 2006.
